This is a recipe I discovered years ago. It makes an excellent side dish when Vidalia onions are in season. Melting creamy Swiss cheese with the rice shaped pasta takes comfort food to a new level.
Orzo and Onions
An adult version of mac and cheese made with sweet vidalia onions
Servings: 4 servings

Equipment
- 1 sauce pan with lid
Ingredients
- 1 cup orzo
- 1 cup milk
- 1 large Vidalia onion
- 1 cup Swiss cheese, shredded
- 1 cup unsalted butter
- 1 cup kosher salt
- 1 cup freshly ground black pepper
Instructions
- boil water, add orzo, cook to instructions on box
- drain
- add butter and milk
- slowly add cheese while stirring
